February Challenge: Day 25

A Recipe..............

These are some of my FAVORITE cookie/candies from the Holidays.  I get to make them every year.  ;)

Church Window Candies:
1 cup chocolate chips
2 tsp. butter of margarine
3 cups of miniature marshmellows
1 egg beaten
1/2 cup of nuts (optional)
1 cup shredded coconut

Here's what you do....

Melt the chocolate chips and butter in the microwave until they are liquidy
Quickly mix in the beaten egg (hurry or the chocolate will harden!)
Cool for a minute and then pour the egg/chocolate/butter mix into the marshmellows and nuts (In a seperate bowl)
Sprinkkle coconut on wax paper
Form two log shaped rolls from the marshmellow/nuts/chocolate mix. put on Wax paper
roll the wax paper around the logs and pinch the ends of the paper with clothespins to keep shut.
Freeze until ready to serve. Should be hard when removed from freezer/fridge
Cut up and enjoy!!!!  :D
